UAPB Sweet Potato Cooking Contest set for Sept. 8; Register now for chance to compete!

yam-1804451_1920Arkansans can show off their family recipes using one of the state’s healthiest crops at the first annual University of Arkansas at Pine Bluff Sweet Potato Cooking Contest on Friday, Sept. 8. The cook-off will be a featured event at UAPB’s Agriculture Field Day, hosted by the School of Agriculture, Fisheries and Human Sciences (SAFHS).

The field day will be held at the UAPB Agriculture Research Station on Oliver Road, off University Drive. Check-in for contestants begins at 8:30 a.m., with the cook-off getting underway at 9 a.m. A three-person panel will start judging the recipes at 10 a.m.

For the chance to participate in the contest, entrants can submit their sweet-potato based recipes to SAFHS personnel. The top five contestants will then be officially invited to participate in the cook-off before they vie for the first-place trophy and other prizes at the field day.

“Whether their specialty is sweet potato casserole or simple roasted sweet potatoes, the contestants will be able to demonstrate their cooking skills using top-quality sweet potatoes grown here at UAPB,” Easter H. Tucker, interim family and consumer sciences program leader for UAPB, said. “The contest will help highlight the versatile nature of the nutritious root vegetable, which lends itself to a wide variety of recipes and flavors.”

Sweet potatoes will be provided to contestants after check-in on the day of the cook-off. A stove and workstation will be available on-site. Recipes will be judged on ease of preparation, availability of ingredients, originality and creativity.

The contest is open to anyone 18 years of age and older, and is free to enter. Recipes for pies are not eligible for the contest. Recipes should be submitted by Thursday, Aug. 17.

Entrants should send their original recipe along with their name, address and phone number to Rachel Will at willr@uapb.edu or 1200 North University Dr., Mail Slot 4966, Pine Bluff, AR, 71601.

For general participation in the field day, registration begins at 7:30 a.m. with welcoming remarks at 8:30 a.m. Field tours begin at 9 a.m. with the last tour at 11 a.m.
